good thread, check out chinese cooking demystified if you like chinese cuisine it's very interesting, bong eats has a lot of indian recipes and i also like bruno albouze's channel though he seems pretty weird.
mapo tofu is a hit to cook at home, easy and tasty although you need sichuan pepper which might be difficult to find.
chickpeas in coconut milk with some thai curry is also great and very easy.
can't say i cook a lot of interesting stuff though since i need to make lunchboxes of almost everything i cook so it's usually stews/soup with rice. however i did make hummus and pita bread the other day which turned out great.

edit: kung pao chicken is also very good but there is peanuts in it so maybe not take it to work.
edit again: i think that having a cookbook is underrated, i pull most of my recipes from the web but if i'm looking for something to cook it's hard to beat a cookbook imo. i got my great grandmother's cookbook some years after she passed away and it's quite nice to have, pretty old and has a lot of interesting "traditional" (more like old nowadays) recipes. also making bread/pastries is fun if you want to do something other than dinner. check some recipes where you rise the dough overnight and bake it out in the morning, it's great.

if you're into baking too, try how to cook that, I know she's more well known for the debunking videos on so yummy and blossom, but the actual baking videos are really good. Quite advanced sometimes with decoration but you don't need to do all of that.

I grab most of my dinner recipes from le creuset books/leaflets or bbc good food, the le creuset website has a selection of recipes too which you can sort by main ingredient, which I find is really useful inspiration if you have some meat in the fridge that you don't know what to do with, and you can pick up the leaflets in store for free.
since they're adverts for the cookware there's a lot of single pan recipes which is nice if you're just cooking a daily meal and you don't want to have loads of stuff on the go, or you just have a tiny kitchen :-)

Paging eXtine.

Also if you don’t mind buying a pizza stone and the right ingredients, plus waiting a day or two for the dough, it’s really easy to make good New York style at home.

Should be obvious but don't follow recipes from instagram-type recipe channels like Tasty or So Yummy. They're fake

This channel has some pretty basic and easy recipes and also explains the science behind some foods.

????? scrambled eggs are dope and super easy.
I unironically watch you suck at cooking and follow the recipes

I'm like kinda new to uni cooking (second year) but chicken marinades are a super easy and cheap way to get a good tasty meal. Do a marinade the night before, throw it in the fridge, after class put it in the oven and do some rice/veggies while it cooks. You can boil the leftover marinade juice to make a sauce to flavour the rice if you just boil it for a few minutes. I can do that meal like that and it can last 2-3 dinners if you get a big enough pack of chicken for like 10-15 bucks

I usually follow a basic format when cooking and just use my imagination. I tend to only cook for myself, so even if I cook something that looks like it shoulda come from the devils bile glands, I still eat it.

A protein, a carbohydrate, veg, and a sauce.

I cook a lot of teriyaki salmon/chicken with rice and green beans/broccoli. Pretty easy and nice imo. I prefer salmon.

Soy sauce, mirin, honey, brown sugar, garlic and ginger. Mix together. You are going Marinade meat whilst rice cooks. Cook meat and veg for however long they take. For about 10-20 seconds before meat is done, dump rest of sauce into the frying pan and coat the meat in the sauce whilst it bubbles and reduces. Don't cook too long or sauce will burn because of all the sugars and get really thick (still nice, but just not as nice). Pour over rice and serve veg on side.

Takes about 30 mins to cook/prep for any number of people.
