I need ideas for having healthier lunches when I'm out in town or even at home
I can't keep eating rice, sandwiches or chicken and chips; so fuckin expensive and boring
What sort of food do you have for lunch?

I recently have really been trying to control my weight and cut my sugar so I've rehauled my food. I make sure to make my lunch in the morning and take it with me to work.

This usually takes me 10-15 minutes in the morning.

Veggies:

I Buy frozen veggies in the bags, normally broccoli/cauliflower mix, followed by a different bag mix of some carrot onion and bell peppers. These are usually like a dollar for a 12-16 oz bag here in California.

: I prep these in 2 main ways, i either steam or boil, and depending on what I'm adding after i might sautee them in the pan as well. I make sure to use different spices each day so i dont get bored. sometimes I just eat it straight up plain as the peppers have some sweetness and it can make a nice change. They come prechopped so its as easy and putting them in and tossing some spices on it.

Meat:
I normally grill chicken or make burgers out of ground beef/turkey/bison. I don't always marinade but I do always season, again with different things each day so I don't get bored. (sometimes ill cut paneer/tofu into slices and grill them if I feel tired of meat or want something different)

Sides:
Usually, I have some yogurt, cottage cheese, fruit (normally some type of berry, grapes, an apple, or prunes, i imagine you could have nuts, I'm allergic tho). All of these things are ready to go grab and pack things. Sometimes ill make mashed potatoes the night before and leave a little for lunch the next day.

Drink: Water is king, if it's too boring you can get those flavorings but be mindful about which ones you get cuz some can have lots of unwanted sugar. I have a microwave at work so I take some instant coffee and a stevia packet (you could take sugar or honey) so I can make a coffee at work if I want to, and if I don't use it I can just take it the next day.

I use different spice mixes i found at my local supermarket I am not that great at cooking but I know I'm a lazy fuck and this is just the best way for me to prep a healthy meal in a short amount of time and include variety without taking too much time.

honestly just making an extra portion when youre making dinner and having the leftovers for lunch is such a life saver
usually if youre just cooking for yourself it works out pretty well when it comes to the ingredient ammounts you can get at the supermarket

Heating up dinner leftovers is great, a hot lunch really makes the difference

Otherwise I love smoked salmon sandwiches atm, surprisingly filling so not as expensive as it looks and healthy cause I rarely eat oily fish otherwise

root vegetables are cheap now so you could buy a bunch and just roast them in the oven for a while. i tend to cut them to smallish pieces and roast them for way too long and then eat with some yoghurt based sauce. do note that this is really boring to reheat. on root vegetables you can also make soup with the roasted pieces, add some broth and mix it together with spices or w/e you got and the roasted vegetables. also works well with butternut squash (probably pumpkin too but i haven't tried).

cabbage is also fairly cheap so you could fry it with some chili, garlic, and meat. i usually use pork but i suppose any meat would work. brussel sprouts are amazing in general and somewhat cheap now so could do the same thing with that.

maybe you could make some sort of wrap if you want to bring stuff with you? like hummus or refried beans with assorted veggies and sauce in some flatbread.

if you have a microwave or oven available you can always make tons of stew and reheat with rice or pasta, super easy and fairly tasty. i sometimes do a stew with chickpeas, coconut milk, and curry paste + whatever stuff i have at home and it always turns out ok.

make a vegetable soup/stew, use proper spices n all, make one huge pot that'd last you the entire week.

If you can't/don't want to do that, fruit salad tastes good, pretty easy to make, and is healthy as fuck.

Whatever you do, remember that meal prepping is an option. It saves so much time and money. I cook about 30 minutes a day, and once a week meal prep my chicken which takes about 40 minutes. I spend about $120 on food a month for about 2900 calories a day. Not sure what the UK equivalent of Bulk Barn is, but any place where you can buy spices in bulk by the gram or ounce will suffice.
