Broccoli and spinach are my go-to veggies as they're available in pretty much any market (mushrooms too but those are a fungus; wood-ear is great!)

But absolute favorite veggie, yam leaves:

CryptoSimDon't cook your fucking carrots.
Brussel sprouts are so bitter I can't understand why anyone would ever eat them. Though to be fair I feel the same way about coffee.

Cooked carrots are great, if you slice em thin and fry em in a stirfry or stew them so they're nice and rich and soft.
Brussel sprouts are only bitter if you burn then. Try blanching them for 2-3 minutes and then frying them with chilli and garlic until they're nice and brown but not burned.

It's the texture of the cooked carrots that gets me, I don't like soft vegetables like that. Also I have had brussel sprouts cooked in many different ways from many different people and they have always been bitter, though people that have eaten the same sprouts have disagreed. Perhaps I'm just too sensitive to certain bitter compounds - the only bitter thing I actually like is dark chocolate.

Aubergines are incredible.
Courgettes are underrated as fuck, god tier vegetable when roasted/fried.

mostly a myth unless you've got some bad vitamin a deficiencies, unfortunately. fun fact, that idea supposedly got popular during ww2, as the british started spreading some weird stories around to cover up the existence of the newly invented radar, which had been allowing for massive british air superiority under cover of night.
