I enjoy growing various chili's, i get a few jars and fill them with olive oil. Dice up the chili and chuck them into the jars, let it sit for about a few weeks and let the temperament of the chili and the oil mature. Then I have access to oil for dressing or cooking that can add various amounts of heat to any dish.

But back on topic, I like my food really spicy.

I'm Korean and I literally own a bag of Carolina reapers that I've been eating. I'm just weird though. Everyone is different. For me I just love the thrill and the feeling of endorphins afterwards.

Spicy food is awesome. Spices enhance the taste of the food, the spices taste good on their own and the burn in your mouth after just feels amazing. I used to not like spicy food but once I had a really good spicy meal I just wanted to have more. I live in the wrong country for liking spicy food though, very hard to find anything hotter than cayenne pepper.

Your problem is that you were eating Sichuan food. It's basically nothing but meat braised in pepper oil that straight up numbs your lips and tongue.

The thing with spicy food is that you have to build your tolerance and figure out what works for you. I spice my food with sambal which is Indonesian pepper. The middle two are the ones I use the most. left for wok dishes and right for all the rest.

i love to make hot tomato sauce in the pan and then put like 3 eggs on that and eat it inside the pan after the eggs hardened a bit

as much as i can handle spicy food, i like having it as a "flavor enhancer" more than just burning hot

At this point my taste buds are completely compromised.
Peppers do taste remarkably good if you have enough tolerance for it.
I would advice to just add the right amount to your dishes so that it doesn't eclipse the taste.

My family is from the Sichuan province so anything that isn't spicy just tastes bland to them.
I love spicy food because I think it brings out different flavors. Some foods just taste better with peppers imo.
Indian food is great too.

Sichuan food is spicy primarily because of the Sichuan peppercorn, which has a distinct trait of numbing and tingling your mouth as you eat foods cooked with it. I'm not surprised that you say it takes away flavor immediately after eating Sichuan food haha.

That said, people just have different tolerances for spicy, just as they do other flavors. It seems you're the type to prefer a more flavorful type of spicy, so I would really recommend trying out gochujang. It's a korean spicy paste that is rather mild compared to other sauces, and has a pretty distinct and nice flavor to boot. You can mix it with soybean paste to dilute the spiciness even more if you'd like - goes great with white rice and meat, especially korean BBQ foodstuffs.
