The grape fragvideo was likely rendered in lawena (hence the gibs etc) which basically maximizes tf2s quality for recording purposes, it wouldn't actually be playable competitively with settings like that.

Well I guarantee more people prefer gibs and all the useless eyecandy off than on, maybe just an assumption, but I'd think it'd be a necessity to have a clear view at all times, especially with a competitive mindset. Not to mention having all that stuff on nowadays just completely kills your fps, all the more reason to have it off.
