This is probably a really old question by now, but was r_shadowrendertotexture removed at some point? I seem to remember that happening but I don't recall when and I'm not sure if it even did.

I was just watching Crack Clan's Tips and Tweaks video on YouTube again last night and was interested to see if it still existed. They used Granary for their demonstrations, I wonder if Valve saw that... anyhow, thanks. So it still exists, they just removed some stuff from Granary?

It still works perfectly fine, including on granary. The only difference is that in granary, shadows are much smaller (i.e., the difference between your shadow at noon and at 7 P.M.) after the patch. This makes it less effective on granary than on other maps, but the function still exists fully.

Do I have to have r_shadow enabled for it to function? How little shadow console commands can I enable to get r_shadowrendertotexture to work?

You need to have r_shadow 1, r_shadowmaxrendered set to something above zero (around 10 is probably a good idea), and r_shadowrendertotexture 1. Keep in mind with r_shadowmaxrendered that this is the number of shadows on screen, not in the game, so it won't count the shadows of packs across the map, so you don't need to set it very high.
