Would probably be better off setting up an STV those don't seem to break as often as replays do.
To replace your health/ammo font you will need to look in HudPlayerHealth.res and HudAmmoWeapons.res.
Assuming you've already taken care of the other font things you would just need to look around in those files and replace the "font" tag with whatever font you want.
We still planning on playing tonight? If so what new maps would we be playing?
I believe Phi talked about releasing a fixed Sunshine (spawn timers and such) but not sure what else we have to test.

It's a custom sourcescheme.res not sure how fonts are handled in that file since i've never messed with it.

Crazy jumps on mid was the best part imo.
Not sure about the pipe seems really out of place and not sure if it would flow well. Try talking to the new map weekends guys and maybe we can playtest it.
Not sure how they could possibly make a system for that due to the fact that most of the former invite/IM players who are in open are playing offclasses.

Probably an unpopular opinion but dropdown was my single favorite part about snakewater. I don't think watching it takes away from the flow of the map since it's such a high risk high reward area cause you're stuck in a corner the second you fall down and can easily get focused. Ideally I'd like to see an unchanged mid and second but add the last changes.

Entry fee seems a little silly. With only 1 rec per team you'd need to get like 18 teams to get the prize pool up to 1 key. Might just be better off making this a fun tournament.
