the timing window is actually pretty long, probably a bit longer than the riposte window in dks1. there's about a half second of downtime where they're falling down before you're able to riposte, which is pretty useful for weapon swapping and regenerating stamina

also the regular old dagger that you find in things betwix has some crazy hidden crit multiplier so you should use that for riposting unless you already do 700+ dmg on critical strikes

upgrade adaptability for action switftness, it'll feel like Dark Souls 1 around 22 adaptability. But you may as well go ahead and get it to 35+ like everybody else that's going to do PvP. Quicker to attack should be an obvious advantage.

adp is actually pretty terrible for pvp, early tests show that get only 1 or 2 additional invincibility frames from rolling and zero extra distance.

did you farm the shit out of every monster u could find ora re u on ng+? the boss ur talking about is like the 3rd or 4th one in the game

Yea its actually easier I'm just used to attacking right away so I have to pay close attention or I fuck it up just out of habit. It just makes less sense (not a riposte and why would enemies fall over just cuz u parry their attack)
