My mom cooks these kinds of eggs all the time. First, boil the eggs until they're cooked through. Peel them, then, you'll need to put the eggs into a stew (or broth, forgot which) and let them absorb the flavor from the stew (or broth). The color will change to a darker color after it absorbs some of the flavor. I'll ask her how to make it and edit this post later.

Alright, got the info. Basically, she braises pork and uses the liquid from the braising to marinate the boiled eggs in. If you wanna look it up, it's called "Thit Kho" in Vietnamese.
