Whenever I see other people watching stv demos they have a menu that has the health of all players on the side but I don't have it for my stv demos.
Also whenever I'm in spectate or dead, I can't see my teammates health either :/

In advanced options there's a toggle for the spec hud, I think it's under 'Advanced Spectator HUD for Tournament Mode' or something like that, that should give you what you're after.
