I made scripts that make switching Ragdolls and Gibs on and off easier.

Type "exec gore_on" into console to turn Gibs/Ragdolls on
Type "exec gore_off" into console to turn Gibs/Ragdolls off

i'd add aliases to make it easier but I couldn't think of any
