What's the easiest way to edit the MVP/Winpanel?
My method involves noclipping in Turbine with a cap limit of 1, but that only allows me to see the entries for the top player, since only I will have a score to be listed. The fact that the winpanel disappears on hud_reloadscheme makes it impossible to see real-time changes as well.

Just use achievement_duel, populate it with red and blue bots, and kill them if you need panel.

Easiest way by far is to record a demo of you winning then playing it back suuuper slow. Mind you the demo does need to be playing for the hud_reloadscheme thing to work. Also binds and shit will not work with demoui up so you'll need to enter it via console.
