So incase you don't know, you can play Melee online with people with very minimal lag and it plays fantastically.

I've been trying to get this to work, and it seems to work perfect, except that the audio lags behind by about a second. Any ideas on how to fix that?

Check your audio backend settings in Config > Audio
Make sure you're using DSound or XAudio and in your Config, Enable Dual Core, and Idle Skipping.
