Scout is easy, all you have to do is point and click.
soldier is easier, you don't even have to point directly at the enemy before clicking
Demo is even easier than that, you just aim up and in the general direction of enemies and click
Medic is easiest of all, the things you're clicking on want to be clicked so they stand still for you

ELAnopeWould like to point out that seven years ago demoman had tons of problems.
Such as:
6 pills per clip, unshootable sticks, ramp up to 180 damage per sticky.
he just answered your question bud. Demo is well balanced now, but it certainly wasn't at launch.

Definitely prefer double elimination. I assume this tournament isn't gonna be seeded, so double Elim is definitely better to get the best teams to the finals.
It's really up to you in terms of the amount of work you want to put in though.
