I have no experience with srcdemo, so I can't be of any help there. Hopefully someone comes along that can help.
Quickest way I can imagine is just the steps I posted minus the stuff you don't want to do. Record through whatever recording tool is used now (using #x720/1080 for your resolution), stitch together the .tgas in vdub, then stitch together those .avi files in Vegas.

By the way, how do I get into the beta maps using Quartz's HUD? Jhudas Iscariote, or something. There's no "Play Multiplayer" option that I'm aware of.
Is it possible to pug on these beta maps? I haven't tried playing them yet. If they are, maybe we can get some pugs going and then give feedback to Valve from a competitive perspective?
I really hope Adventure, 4starters, beef, rush and rckteer aren't the only played maps on your server. A lot of the other names are amazing. Dystopia is probably one of my favorite maps to jump on.
